With the dog days of summer in full force, you don’t want to be stuck in a hot kitchen preparing snacks all day for yourself or the kids. These quick and easy recipes will not only get you out of the kitchen in a hurry, they are healthy and refreshing too.
Banana Chocolate Chip Ice Cream Bites
All you have to do is slice and freeze about 6 very ripe bananas for an hour and a half. Set the bananas out for about 5 minutes to let them soften a bit before pulsing/blending them in a food processor or blender from Buydig.com until smooth and creamy, and then stir in the mini chocolate chips. Scoop the ice cream into a greased mini muffin pan, filling each cup almost full, then sprinkle each one with a few more mini chocolate chips. Place the bites in the freezer for about an hour and then use a knife to pop each one out. Stack them in a freezer safe container with parchment paper between each layer of bites to prevent them from sticking together.
Yogurt Strawberries
Dip strawberries, halved or whole, in vanilla yogurt. Greek yogurt might be best, because it’s thicker. Then put them on a baking pan lined with parchment or wax paper and freeze.
PB, Strawberry and Banana Quesadillas
You’ll need 2 tortillas, 1/2 – 1 banana, 2 – 4 strawberries, 1 – 2 tablespoons natural peanut butter, 1 – 2 tablespoons of whatever flavored jam you choose. Over medium heat, preheat a pan that’s large enough for your tortilla. Spread the peanut butter on one side of a tortilla. Spread jam on one side of another tortilla. Make enough banana and strawberry slices to cover the bottom of one tortilla. Place the other tortilla, jam or peanut butter side down, on top of the other tortilla. Cook in the pan until the bottom is crisp. Flip over and cook the other tortilla until crisp. Serve immediately. Store any leftovers in the refrigerator.
Fruit Pizza
Start with a whole-grain base like a whole-wheat tortilla, pita or flatbread for the pizza crust. Next, give them a serving of natural nut butters or Greek yogurt for a healthy protein pizza sauce. Then, it’s time for the toppings! Apple Cookies
To make 8 of these healthy snacks, you’ll need 1 apple,1/4 cup peanut butter,1/4 cup almonds, sliced, 1/4 cup walnuts, chopped, 1/4 cup shredded coconut, and 1/4 cup chocolate chips. Slice the apple into thin rings and remove core. Spread peanut butter over one side of ring. Top with almonds, walnuts, coconut, and chocolate chips.
